Bon Appetit!

Being a vegan is getting easier and easier and even more fun!

Mommy blogging can be tough work - Tweetups here, meetings there - But what happens when you attend a "Mommy" taffy apple making factory tour and subsequently have lunch at a gracious mom's home - WELL, you get ideas!

A perfectly vegan AND kosher idea.

My latest addiction and can be yours too: MATZO PIZZA!

It is quick and easy. Can be vegan or adapt to any palate. Most importantly, your family is sure to love.

My preference today was a spicy, vegan matzo pizza.

I had some really nice spicy Matzah, spaghetti sauce full of onions and peppers, vegan crumbles, 3 veggie slices (taste just like cheese) and artichoke hearts.

Oh-my-goodness, guaranteed to enjoy, and perfect for little ones who want to make it themselves with their tiny, creative hands.

Add anything at all to make your pizza fit and loaded with fiber. Suggestions include mushrooms, peas, pineapples and more. Simply pop in the oven on a cookie sheet or pan, heat at 425 degrees for 5-10 minutes, and you have yourself a delicious, healthy meal that will keep you full and satisfied.

Bon Appetit!
