Before I was born, my Gran would travel to New Orleans and eat at Dooky Chase and come home and tell my mother ALL about it ... 

I grew up loving it, but it was not until I was 18 that I could experience it for myself! "It's ALL in the roux!" my Gran would say, and rest her soul, she was right!
