Who ate the BEST vegan pancakes this weekend? I did! With a hint from my natural living guru Irina Wardas, I mixed and matched and came out with a wonderful batch of pancake mix!
I prefer testing new fast ways as often as possible to keep myself interested and learning. AND Irina promises that these pancakes enhance bad moods!
It is such a great feeling to consume a meal and know that it is helping you in some way!
Irina also insists that this delicious breakfast treat is vital toward our fight for energy, weight loss, regulating blood pressure, and combating aging!
There is "vitamin C, omega-3 fatty acids, protein and healthy carbohydrates" - YUM! My adding chocolate chips also contributes to antioxidants! Woo Hoo!
Below shows my version ~ I adjusted the recipe a bit - as most cooks do - to accommodate the ingredients that I actually had in my cupboard. Nonetheless, these pancakes came out moist and scrumptious!
1/1/3 cups organic whole wheat flour
2/3 cup old-fashioned rolled oats
2 tsp baking powder
1/2tsp baking soda
1 cup coconut milk
¼ cup Agave nectar syrup
3 tbsp frozen orange juice concentrate, thawed (undiluted)
a handful of chocolate chips
1/2 tsp organic brown sugar
I mixed all of the dry ingredients in a bowl and let them settle to room temperature. I combined the liquids in a separate bowl. Once all of the ingredients were room temp, I stirred them together very well. The combination's consistency, though thick, was able to be poured easily.
With very little mess, a griddle heated to at least 400 degrees and generously brushed with grape-seed oil ... POOF! Succulent, chocolaty, orange goodness that is good for you!

The batch made about 10 pancakes. My family ate their fill. I wrapped what was left in plastic wrap and popped them in the fridge. ( I actually had one for a snack later and it microwaved nicely in 12 seconds).
